Next time you see mascarpone cheese on sale, buy it. The creaminess is irreplaceable and is versatile in savoury and sweet dishes.
This is an easy appetizer and it will keep your guest wanting more. The saltiness of the cracker is balanced by the creamy cheese and the semi-sweet toppings.
To make it, use crackers of your choice (I used a gluten-free sweet potato cracker I purchased from Costco), add 1/2 teaspoon of mascarpone cheese on each cracker, top with a small dot of agave syrup or honey, a few pomegranate seeds and a mint leaf. No need to mix the ingredients in a bowl first. To da, so easy!
