During the weeknights in the summer, I enjoy making quick salads that I can whip up in less then 10 minutes.
I made this last night and my husband and I ate the entire bowl in one sitting. The salad is refreshing and light, perfect for this time of year. Enjoy!
½ cabbage-thinly sliced (can use a mandolin)
½ cucumber-peeled, seeds removed and diced
½ carrot-thinly sliced (I used a peeler)
2 cups of Greek yogurt (I used non-fat)
1/3 cup of low-fat mayo
A pinch of salt and pepper
¼ cup of finely chopped dill
Zest of ¼ of an orange
1. Cut the vegetables according to instructions
2. Zest the orange
3. Make the dressing: Combine all ingredients in a bowl. Taste and adjust as needed.
1. Place all vegetables in a bowl and add the dressing. Mix well.
2. Top with green onions. Refrigerate until time to serve.
